Ingredients

Dijonaise

2 cup rice oil

3 egg yolks

4 tbsp dijon mustard

1 tbsp roasted garlic

2 tbsp lemon juice or citric acid to taste

Step 1

Roast garlic in oil on low heat until it becomes squish and delicious.

1 tbsp roasted garlic

Step 2

Add yolks, mustard and roasted garlic, to a food processor and begin to blend.

4 tbsp dijon mustard

Step 3

As you blend, slowly stream in rice oil. This should emulsify becoming fluffy/creamy, just like mayo.

2 cup rice oil

Step 4

Add in citric acid (or lemon) and flaky salt to taste.

Step 1

Toast brioche buns.

Assemble with dijonaise, tomato, chive powder, salt, pepper, and more dijonaise.
