Ingredients

3 quart Idaho Russet Potatoes (1 shredded)

2 cups duck fat to cover

canola oil

Step 1

stir potatoes on low heat for about 5 minutes in the fat. transfer to plastic lined sheet tray and cover with plastic. press with another tray on top and chill over night

3 quart Idaho Russet Potatoes (1 shredded)

sheet tray

plastic wrap

Step 2

cut to desired sizes and toss in freezer til frozen solid

Step 3

fry off in 325°F Oil til golden brown and delicious

canola oil
