Lil steaky tip for ya. Try to stay away from a cut that has this chain in the center. Its very tough and chewy. Typically we’d use these cuts for customers who ordered well done 👍.

Ingredients

Steak

Dry aged NY Strip steak

Dry aged NY Strip steak

Spiceology Flaky Salt

Spiceology Flakey Salt

Green Cheese Sauce

shred jack cheese

8 shred jack cheese

milk

2 cup milk

salt

pinch salt

Spiceology Sodium Citrate

³⁄₁₆ oz Spiceology Sodium Citrate

vinegar

³⁄₁₆ oz vinegar

chives

2 tbsp chives

Steak

Step 1

Heavily season your steak with salt on all sides

Step 2

Fat side down (no oil), add the steak to a ripping hot pan. The fat acts as the oil.

Step 3

Cook on both sides until a good crust has developed. A rare/med rare steak should be 120–130 internal temp F. Let sit for 10 mins before cutting into the steak.

Green Cheese Sauce

Step 1

Add the ingredients below to a pan on medium heat.

2 cup milk

vinegar

³⁄₁₆ oz vinegar

salt

pinch salt

Spiceology Sodium Citrate

Step 2

Mix in cheese until well combined.

Step 3

Finely chop chives and add in once cheese sauce has been removed from heat.
