Ingredients

4 whole 200g eggs about

125 g sugar

2 g salt

225 cream

vanilla

Step 1

Whip together whipped cream

Step 2

Get a double boiler going (make sure not to touch metal to metal, or else you'll scramble your eggs.) Whisk together eggs, sugar and salt until it reaches 165F.

4 whole 200g eggs about

125 g sugar

2 g salt

Step 3

Immediately throw it into a standmixer until it becomes nice and creamy.

Step 4

Fold half your whipped cream in. Once incorporated, fold in the other half.
