Ingredients

Pea Soup

1 bag green peas

1 bunch of spinach

10 leaves fresh mint

salt

sugar

1 qt veggie stock

Garnish

sambal oelek

Protein of choice (prawns are delicious)

Pea Soup

Step 1

Season water in a pot heavy with salt and sugar till it’s delicious

Step 2

Once boiling add peas

1 bag green peas

Step 3

Just before peas are done add mint and spinach

10 leaves fresh mint

1 bunch of spinach

When peas are cooked strain and cool

Step 5

Once peas are cool put in blender, add 1qt stock and puree.

You can strain if you want, I would because we are better than most but it shouldn’t be needed.

Season with salt and sugar

Step 1

Peel and chop carrots before blanching in water with salt.

Step 2

In a pan with butter, cook shrimp (or other protein.) Season with salt and pepper

Step 3

Chop cooked shrimp.

Step 4

Combine equal parts sambal and yogurt.

Step 5

Add everything to pea soup with a drizzle of oil and squeeze of lemon juice and enjoy.
