Ingredients

2 lb cheddar cheese shredded

½ lb cream cheese

3 cup milk

pinch salt

⅚ oz sodium citrate

⅝ oz vinegar

Step 1

Bring the milk and sodium citrate to a simmer. Must do this to hydrate the sodium citrate.

Step 2

Whisk in cream cheese and bring up to a simmer.

½ lb cream cheese

Step 3

Immediately add cheddar cheese and remove from the heat and cover. Let sit for ten minutes.

Step 4

Add the vinegar and blend til smooth

Mix with pasta and enjoy
