Ingredients

4 quart yellow onion julienned

1 lb unsalted butter

1 cup flour

2 quart stock (i used chicken and turkey)

rice vinegar to taste

black pepper to taste

salt to taste

bread for crouton

gruyere cheese to garnish before baking (i did Parmesan)

chives to garnish

Step 1

Slice all of your onions (julienned.)

4 quart yellow onion julienned

Step 2

To a large pot, add in your butter. Once melted, add in onions, salt and pepper, and cook on medium heat for 30 mins, occasionally stirring in between. Continue cooking until onions become super soft, and they gain a deep dark color.

Step 3

Add in rice wine vinegar and flour. Continue cooking on low heat while stirring, we don't want to flour to burn. We're essentially making a roux. We're going for an onion looking paste.

Step 4

Now add in your stock. Typically it's beef stock, but I'm using what I've got.

2 quart stock (i used chicken and turkey)

Step 5

Now season to taste with rice vinegar, salt, pepper, etc.

Step 6

Now get a big chunk of bread and trim the crust off.

Step 7

Add the soup to individual bowls/pots, place the bread (crouton) in the center of the bowl, and top with cheese. Then thrown in the broiler on high to melt.

Step 8

Garnish with chives and enjoy.
