Ingredients

Eggplant Dredge:

*  all purpose flour

2 cup * all purpose flour

*  corn starch

¼ cup * corn starch

*  garlic powder

1 tbsp * garlic powder

*  onion powder

1 tbsp * onion powder

*  paprika

2 tbsp * paprika

*  cayenne pepper

1 tbsp * cayenne pepper

*  dark Chile powder

1 tbsp * dark Chile powder

*  kosher salt

2 tsp * kosher salt

Eggplant:

*  large eggplant, sliced

* Buttermilk, enough to cover the eggplant

sauce:

*  of the reserved hot frying oil

6 ounces * of the reserved hot frying oil

*  Nashville Hot

4 tbsp * Nashville Hot

Nashville Hot:

*  maple sugar

1 tbsp * maple sugar

*  onion powder

1 tbsp * onion powder

*  garlic powder

1 tbsp * garlic powder

*  paprika

2 tbsp * paprika

*  dark Chile powder

1 tbsp * dark Chile powder

*  cayenne pepper

2 tbsp * cayenne pepper

*  salt

2 tbsp * salt

Step 1

For frying: * Peanut oil, enough to fill a deep fryer or large pot to a depth of 2 inches

Step 2

* Heat the oil to 350 degrees Fahrenheit

Step 3

To serve: Eggplant fries, Nashville Hot sauce, Dill pickle chips and dill pickle juice, to taste
