Ingredients

Filling

1 lbs ground chuck

½ cup duck fat

5 cloves garlic

0.5 yellow onion

2 tbsp Spiceology Mediterranean Oregano

1 tbsp Spiceology Red Chili Flake

soy sauce to taste

Spiceology Flakey Salt to taste

Spiceology Black Pepper to taste

cooked jazmine rice

Leaves

as many fresh grape leaves you want

salted pot of water to blanch

ice water to shock

lemon juice

Step 1

Sweat garlic and onions with the fat until translucent. Bloom oregano and chili flake in the fat and then add the beef. Get some color on the beef. Toss in the rice. Season with salt, pepper, soy sauce.

Step 2

Blanch and shock the leaves or use store bought jarred leaves.

Step 3

Each one is a different size so just use common sense when filling these. Fold them and roll them like in the video. Line up in a pot and cover with lemon juice. Bring to a low simmer covered with a plate weighing down for about 15 minutes.
