Ingredients

dozen Nice Eggs

Kosher salt

1 ½ cups Kosher salt

Spiceology Truffle popcorn Salt

½ cup Spiceology Truffle popcorn Salt

brown sugar

1 cup brown sugar

chopped scallions

¼ cup chopped scallions

Step 1

Mix all cure ingredients together
Kosher salt

¼ cup chopped scallions

Step 2

even a layer on a tray and make indentations to set your yolks

Step 3

place a yolk on each indentation
dozen Nice Eggs

dozen Nice Eggs

Step 4

cover with the rest of cure mix

Step 5

cure in fridge for a day or two

Step 6

dehydrate at 150°F for 2 hours or in an oven at 170°F on a sheet tray with greased rack

Step 7

store in freezer for when needed :)
