Slice at about 1/4 inch thick then dehydrate at 145°F for about 15 hours. Store in airtight containers.
Desired amount of mandarins
In a double boiler (metal bowl over small pot of simmering water) melt half of your chocolate while mixing. Once completely melted and smooth, toss in the rest of the chocolate while mixing til melted. This is called seeding the chocolate.
