For the peppers

5 plump shaped poblano chiles (Char and peel the skin off)

For the picadillo filling

1 yellow onion

2 Yukon gold potatoes

1 lbs ground beef

1 wheel cotija cheese

oil for frying

2 chile Guajillos seeded

2 tbsp spice tribe oregano

1 tbsp spice tribe cumin

3 cups chicken stock

salt and pepper to taste
