Ingredients

105 g roasted garlic

1,432 g water

25 g Spiceology Flakey Salt

450 g chickpea flour

30 g extra virgin olive oil

Step 1

Simmer water and salt, whisk in chickpea flour.

Step 2

Cook over low heat for about a minute. Transfer to robot coupe and spin.

Step 3

Add in garlic and olive oil. Spin for about 5-8 minutes til smooth af.

105 g roasted garlic

30 g extra virgin olive oil

Step 4

Transfer to an oiled plastic lined quarter sheet tray or half sheet tray if recipe is doubled.

Step 5

Cool in walk in. Cut to desired shapes. Fry off in deep fryer to order.
