Texas BBQ Sauce

1 cup Ketchup

1 cup san marzano tomato sauce

¼ cup Shiner Bock

1 tbsp Cayenne

2 tbsp black pepper

2 tbsp brown sugar

2 tbsp Worcestershire

1 tbsp Spiceology Garlic Powder

salt to taste

BBQ Mayo

½ cup BBQ Sauce

½ cup Mayo

Escabeche

1 cup of chopped carrot

1 chopped yellow onion

2 cups chopped jalapeno

5 cloves garlic

¼ cup sambal

1 quart apple cider vinegar

salt to taste

sugar to taste

Brisket

lbs 8 to 12 brisket

kosher salt

Spiceology Black Pepper

Brisket Basting Marinade

can of beer

cup of canola oil

rice wine vinegar to taste

paprika

salt to taste

brisket day drippings

Step 1

For the Texas BBQ Sauce

Step 1

Mix ingredients together and set aside

1 cup Ketchup

1 tbsp Cayenne

2 tbsp black pepper

2 tbsp brown sugar

2 tbsp Worcestershire

salt to taste

Step 2

For the BBQ Mayo

Step 1

Mix ingredients together and set aside

½ cup BBQ Sauce

½ cup Mayo

Step 2

For the Escabeche

Step 1

Bring ingredients below to a boil

¼ cup sambal

1 quart apple cider vinegar

Step 2

Salt and sugar to taste
