Ingredients

2 lbs shred cheese

½ lbs cream cheese

3 cups milk

pinch Spiceology Flakey Salt

⅚ oz Spiceology Sodium Citrate

⅝ oz vinegar

Step 1

bring the milk and sodium citrate to a simmer. Must do this to hydrate the sodium citrate.

3 cups milk

⅚ oz Spiceology Sodium Citrate

Step 2

whisk in cream cheese and bring up to a simmer.

½ lbs cream cheese

Step 3

immediately add cheddar cheese and remove from the heat and cover. Let sit for ten minutes.

2 lbs shred cheese

Step 4

add the vinegar and blend til smooth

⅝ oz vinegar

pinch Spiceology Flakey Salt
