Ingredients

1 quart Whole Milk

1 oz Spiceology Sodium Citrate

2 tbsp rice vinegar

8 cream cheese

2 lbs medium cheddar cheese

Spiceology Flakey Salt to taste

2 tbsp Spiceology Guajillo Ground Chile

1 tbsp Spiceology Chipotle

2 roasted chopped chile poblanos

Step 1

Bring the milk, guajillo, Chipotle and sodium citrate to a simmer. Must do this to hydrate the sodium citrate.

1 quart Whole Milk

2 tbsp Spiceology Guajillo Ground Chile

1 tbsp Spiceology Chipotle

1 oz Spiceology Sodium Citrate

Step 2

Whisk in cream cheese and bring up to a simmer.

8 cream cheese

Step 3

Immediately add cheddar cheese and remove from the heat and cover. Let sit for ten minutes.

2 lbs medium cheddar cheese

Step 4

Add the vinegar and blend til smooth. Toss in the chopped poblanos. Blend a touch to break up the poblanos if you want.

2 tbsp rice vinegar

2 roasted chopped chile poblanos

Spiceology Flakey Salt to taste
